Baked Pea Beans With Pork
Ingredients
- 1 quart pea beans
- 1 teaspoon salt
- ½ teaspoon pepper
- 2 teaspoons sugar
- 1 pound fat pork, scored
- warm water
Method
- 1 Soak pea beans overnight in cold water.
- 2 Drain beans and place in an earthen bean-pot.
- 3 Add salt, pepper, sugar, and scored fat pork to the pot.
- 4 Fill the pot with warm water.
- 5 Bake in a moderate oven (350°F) all day, adding water as needed to keep beans moist.
