Baked Pea Beans With Pork

Ingredients

  • 1 quart pea beans
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 teaspoons sugar
  • 1 pound fat pork, scored
  • warm water

Method

  1. 1 Soak pea beans overnight in cold water.
  2. 2 Drain beans and place in an earthen bean-pot.
  3. 3 Add salt, pepper, sugar, and scored fat pork to the pot.
  4. 4 Fill the pot with warm water.
  5. 5 Bake in a moderate oven (350°F) all day, adding water as needed to keep beans moist.
