Baked Pea And Peanut Loaf
Ingredients
- 1 cup peas, beans, or lentils, soaked overnight and cooked until tender
- 2 eggs
- 1/2 cup dried breadcrumbs
- 2 teaspoons poultry seasoning
- 2 teaspoons celery salt
- 1/2 cup whole wheat flour
- 1 1/2 cups tomato juice and pulp
- 2 teaspoons onion juice
- 1/2 teaspoon salt
- 2 cups chopped peanuts
Method
- 1 Cook soaked peas, beans, or lentils until tender, then push through a colander to create a smooth mixture.
- 2 In a large bowl, combine the vegetable mixture with eggs, breadcrumbs, poultry seasoning, celery salt, flour, tomato juice and pulp, onion juice, salt, and chopped peanuts. Mix thoroughly.
- 3 Place the mixture in a greased baking dish and bake for 30 minutes.
