Baked Pea And Peanut Loaf

Ingredients

  • 1 cup peas, beans, or lentils, soaked overnight and cooked until tender
  • 2 eggs
  • 1/2 cup dried breadcrumbs
  • 2 teaspoons poultry seasoning
  • 2 teaspoons celery salt
  • 1/2 cup whole wheat flour
  • 1 1/2 cups tomato juice and pulp
  • 2 teaspoons onion juice
  • 1/2 teaspoon salt
  • 2 cups chopped peanuts

Method

  1. 1 Cook soaked peas, beans, or lentils until tender, then push through a colander to create a smooth mixture.
  2. 2 In a large bowl, combine the vegetable mixture with eggs, breadcrumbs, poultry seasoning, celery salt, flour, tomato juice and pulp, onion juice, salt, and chopped peanuts. Mix thoroughly.
  3. 3 Place the mixture in a greased baking dish and bake for 30 minutes.
