Baked Parmesan Semolina Cakes
Ingredients
- 1/2 pint milk
- 2 oz butter
- 4 oz semolina
- 2 tbsp grated Parmesan cheese
- 3 egg yolks
- 1 pinch nutmeg
- 2 tbsp cream
- extra butter and Parmesan for topping
Method
- 1 Boil milk in a saucepan, then stir in butter, semolina, 2 tbsp Parmesan, egg yolks, and nutmeg. Mix well.
- 2 Let the mixture cool slightly, then spread it onto a surface to a thickness of about one finger.
- 3 Grease a fireproof dish with butter and sprinkle with Parmesan. Cut the semolina paste into shapes using a small mold.
- 4 Place the shapes in the dish, top with cream and more Parmesan, then bake at 350°F for 5 minutes. Serve immediately.
