Baked Parmesan Polenta

Ingredients

  • 1 cup cornmeal
  • 2 cups boiling water or stock
  • 1 tbsp butter
  • ¼ cup grated Parmesan cheese
  • 1 egg, beaten

Method

  1. 1 Gradually whisk cornmeal into boiling water or stock while stirring continually with a wooden spoon.
  2. 2 Cook for 15 minutes until thick and smooth, then stir in butter, Parmesan, and beaten egg.
  3. 3 Let mixture cool slightly, then spread in layers in a baking dish, adding butter and Parmesan between layers.
  4. 4 Bake in a slow oven (300°F) for 1 hour. Serve hot.
