Baked Parmesan Polenta
Ingredients
- 1 cup cornmeal
- 2 cups boiling water or stock
- 1 tbsp butter
- ¼ cup grated Parmesan cheese
- 1 egg, beaten
Method
- 1 Gradually whisk cornmeal into boiling water or stock while stirring continually with a wooden spoon.
- 2 Cook for 15 minutes until thick and smooth, then stir in butter, Parmesan, and beaten egg.
- 3 Let mixture cool slightly, then spread in layers in a baking dish, adding butter and Parmesan between layers.
- 4 Bake in a slow oven (300°F) for 1 hour. Serve hot.
