Baked Parmesan Polenta With Beef Extract
Ingredients
- 1 quart white stock
- 2 tablespoons butter
- cornmeal (enough to make a thick mush)
- 4 tablespoons butter
- 4 tablespoons grated Parmesan cheese
- 1 tablespoon beef extract
- breadcrumbs
- grated Parmesan cheese
- melted butter
Method
- 1 Boil the white stock with 2 tablespoons of butter.
- 2 Slowly sprinkle in enough cornmeal to create a thick mush. Remove from heat.
- 3 Stir in 4 tablespoons of butter, 4 tablespoons of grated Parmesan cheese, and 1 tablespoon of beef extract.
- 4 Mold the mixture into small cups and turn them out onto a baking dish.
- 5 Sprinkle the tops with breadcrumbs and cheese, then bake, basting occasionally with melted butter.
