Baked Parmesan Polenta With Beef Extract

Ingredients

  • 1 quart white stock
  • 2 tablespoons butter
  • cornmeal (enough to make a thick mush)
  • 4 tablespoons butter
  • 4 tablespoons grated Parmesan cheese
  • 1 tablespoon beef extract
  • breadcrumbs
  • grated Parmesan cheese
  • melted butter

Method

  1. 1 Boil the white stock with 2 tablespoons of butter.
  2. 2 Slowly sprinkle in enough cornmeal to create a thick mush. Remove from heat.
  3. 3 Stir in 4 tablespoons of butter, 4 tablespoons of grated Parmesan cheese, and 1 tablespoon of beef extract.
  4. 4 Mold the mixture into small cups and turn them out onto a baking dish.
  5. 5 Sprinkle the tops with breadcrumbs and cheese, then bake, basting occasionally with melted butter.
