Baked Parmesan Noodles
Ingredients
- 1/2 lb noodles
- 2 cups milk or stock
- 1 tbsp butter
- Salt, pepper, and grated nutmeg to taste
- 1/2 cup cream or stock
- 1 tbsp butter
- 1/4 lb grated Parmesan cheese
- Breadcrumbs
- Grated Parmesan cheese
- 1 egg yolk from a hard-boiled egg
Method
- 1 Boil noodles in salted water for 10 minutes. Drain thoroughly.
- 2 In a saucepan, combine noodles, milk or stock, 1 tbsp butter, salt, pepper, and nutmeg. Simmer until liquid is absorbed.
- 3 Stir in cream or stock, remaining 1 tbsp butter, and 1/4 lb Parmesan. Cook until cheese melts.
- 4 Transfer to a buttered serving dish. Top with breadcrumbs, extra Parmesan, and sieved egg yolk.
- 5 Brown in the oven and serve immediately.
