Baked Parmesan Macaroni

Ingredients

  • 1/4 lb macaroni, broken into 1-inch pieces
  • 3 pints water
  • 1 large pinch salt
  • 1 oz fresh butter
  • 1 small pinch white pepper
  • 2 oz or more grated Parmesan cheese

Method

  1. 1 Bring 3 pints of water to a boil with a large pinch of salt in a large saucepan.
  2. 2 Add broken macaroni and boil rapidly for 20-25 minutes until done. Strain through a colander.
  3. 3 Return macaroni to the saucepan with butter, white pepper, and salt. Shake over heat for 1-2 minutes.
  4. 4 Remove from heat and stir in grated Parmesan cheese until melted. Serve immediately with toast.
