Baked Parmesan Gnocchi
Ingredients
- 4 tablespoons butter
- 4 tablespoons cornstarch
- 4 tablespoons all-purpose flour
- ½ teaspoon salt
- 1 pint milk
- 2 egg yolks, beaten
- 4 tablespoons grated Parmesan cheese
Method
- 1 Melt butter in a saucepan over medium heat. Whisk in cornstarch, flour, and salt until smooth.
- 2 Gradually whisk in milk. Cook, stirring constantly, until the mixture thickens and becomes smooth.
- 3 Remove from heat and stir in beaten egg yolks and Parmesan cheese until combined.
- 4 Spread the mixture onto a buttered baking pan to cool and set.
- 5 Cut the set paste into shapes, place on a baking sheet, and brown in a moderate oven (350°F).
