Baked Parmesan Gnocchi

Ingredients

  • 4 tablespoons butter
  • 4 tablespoons cornstarch
  • 4 tablespoons all-purpose flour
  • ½ teaspoon salt
  • 1 pint milk
  • 2 egg yolks, beaten
  • 4 tablespoons grated Parmesan cheese

Method

  1. 1 Melt butter in a saucepan over medium heat. Whisk in cornstarch, flour, and salt until smooth.
  2. 2 Gradually whisk in milk. Cook, stirring constantly, until the mixture thickens and becomes smooth.
  3. 3 Remove from heat and stir in beaten egg yolks and Parmesan cheese until combined.
  4. 4 Spread the mixture onto a buttered baking pan to cool and set.
  5. 5 Cut the set paste into shapes, place on a baking sheet, and brown in a moderate oven (350°F).
