Baked Parmesan Fish With Mushroom Onions

Ingredients

  • 1/3 cup grated non-fat parmesan cheese
  • 1 teaspoon all-purpose flour
  • 1 teaspoon crushed thyme leaves
  • 4 white fish fillets (6 ounces each)
  • 1 medium onion, chopped
  • 1/2 cup halved mushroom caps
  • 1 cup finely sliced green onions
  • 1 clove garlic, crushed
  • Ground black pepper

Method

  1. 1 Preheat oven to 350°F. Combine parmesan cheese, flour, and thyme in a paper bag.
  2. 2 Coat each fish fillet individually by shaking it in the bag with the dry mixture.
  3. 3 Place coated fillets on a rack in a baking pan. Bake for 20 minutes until fish flakes easily.
  4. 4 Sauté onion, mushrooms, green onions, and garlic in a skillet until tender. Season with pepper.
  5. 5 Serve the baked fish topped with the sautéed mushroom and onion mixture.
