Baked Parmesan Fish With Mushroom Onions
Ingredients
- 1/3 cup grated non-fat parmesan cheese
- 1 teaspoon all-purpose flour
- 1 teaspoon crushed thyme leaves
- 4 white fish fillets (6 ounces each)
- 1 medium onion, chopped
- 1/2 cup halved mushroom caps
- 1 cup finely sliced green onions
- 1 clove garlic, crushed
- Ground black pepper
Method
- 1 Preheat oven to 350°F. Combine parmesan cheese, flour, and thyme in a paper bag.
- 2 Coat each fish fillet individually by shaking it in the bag with the dry mixture.
- 3 Place coated fillets on a rack in a baking pan. Bake for 20 minutes until fish flakes easily.
- 4 Sauté onion, mushrooms, green onions, and garlic in a skillet until tender. Season with pepper.
- 5 Serve the baked fish topped with the sautéed mushroom and onion mixture.
