Baked Parmesan Cheese Soufflés
Ingredients
- 1/2 lb Parmesan cheese
- 2 oz mild Gloucester cheese
- 4 egg yolks
- 6 oz butter
- 3/4 cup cream
Method
- 1 Beat the cheeses together in a mortar until smooth.
- 2 Gradually add the egg yolks, butter, and cream, mixing well.
- 3 Adjust proportions to taste if desired.
- 4 Spoon the mixture into small paper cases.
- 5 Bake in a moderate oven (350°F) for a short time until set.
- 6 Serve immediately while hot.
