Baked Parmesan Cheese Puffs With Paprika
Ingredients
- 4 tablespoons butter
- ½ cup water
- ½ cup flour
- a few grains salt
- a few grains paprika
- 2 ounces grated Parmesan cheese
- 2 eggs
- beaten egg diluted with 1-2 tablespoons milk or water
- 3-4 small cubes of cheese per ramequin
Method
- 1 Boil butter and water in a saucepan. Add flour, salt, and paprika; cook and stir until the mixture pulls away from the pan.
- 2 Transfer to a mixing bowl. Beat in Parmesan cheese, then beat in eggs one at a time until smooth.
- 3 Shape the paste into flat circles (1 inch diameter) on a buttered baking sheet. Brush tops with egg wash and top with small cheese cubes.
- 4 Bake for 15 minutes. Serve very hot.
