Baked Parmesan Cheese Puffs With Paprika

Ingredients

  • 4 tablespoons butter
  • ½ cup water
  • ½ cup flour
  • a few grains salt
  • a few grains paprika
  • 2 ounces grated Parmesan cheese
  • 2 eggs
  • beaten egg diluted with 1-2 tablespoons milk or water
  • 3-4 small cubes of cheese per ramequin

Method

  1. 1 Boil butter and water in a saucepan. Add flour, salt, and paprika; cook and stir until the mixture pulls away from the pan.
  2. 2 Transfer to a mixing bowl. Beat in Parmesan cheese, then beat in eggs one at a time until smooth.
  3. 3 Shape the paste into flat circles (1 inch diameter) on a buttered baking sheet. Brush tops with egg wash and top with small cheese cubes.
  4. 4 Bake for 15 minutes. Serve very hot.
