Baked Paprika Squash

Ingredients

  • 1 small squash
  • 1 tablespoon melted butter
  • ½ teaspoon salt
  • ½ teaspoon paprika
  • finely chopped parsley, for garnish

Method

  1. 1 Cut a slice from the top of the squash and remove the seeds and stringy fibers.
  2. 2 Add melted butter, salt, and paprika inside the squash.
  3. 3 Cover closely with the lid and bake in a slow oven (300°F) for about 30 minutes, or until tender.
  4. 4 Remove the lid, scoop out the pulp with a spoon, and pile it into a hot vegetable dish.
  5. 5 Garnish with finely chopped parsley and serve immediately.
