Baked Oysters With Cream Sauce

Ingredients

  • 1/2 cup butter
  • 1 cup cream
  • 3 tablespoons sherry
  • 1 teaspoon anchovy paste
  • dash red pepper
  • grated lemon peel
  • 1 quart oysters
  • salt and pepper
  • grated cheese
  • dried bread crumbs

Method

  1. 1 Combine butter, cream, sherry, anchovy paste, red pepper, and lemon peel in a baking dish. Heat thoroughly without boiling.
  2. 2 Remove half the sauce and set aside. Add oysters to the dish, then season with salt, pepper, grated cheese, and bread crumbs.
  3. 3 Pour the remaining sauce over the oysters. Top with more cheese and bread crumbs.
  4. 4 Bake in a very hot oven (425°F) until heated through. Serve immediately.
