Baked Oysters On The Half Shell
Ingredients
- 1 quart oysters
- 1 ounce butter
- 1 ounce flour
- 1 pint oyster liquor
- ½ teaspoon salt
- 1/8 teaspoon white pepper
- 1/8 teaspoon nutmeg
- 8-10 oyster shells
- bread crumbs
- small bits of butter
Method
- 1 Blanch oysters in their liquor by bringing just to a boil. Strain, saving the hot liquor.
- 2 Wash oysters in cold water and drain. Clean oyster shells thoroughly with a brush.
- 3 Melt butter and flour in a saucepan. Gradually stir in boiling oyster liquor until smooth.
- 4 Season sauce with salt, white pepper, and nutmeg. Heat oysters in the sauce.
- 5 Fill shells with oysters, dust with bread crumbs, add a bit of butter on each.
- 6 Brown in a quick oven (400°F) and serve on a folded napkin.
