  • Oysters, drained
  • Lemon juice
  • Puff pastry
  • Egg white
  • Butter

Method

  1. 1 Drain oysters and cover with a little lemon juice.
  2. 2 Roll out puff pastry and cut into 4-inch squares. Brush squares with egg white.
  3. 3 Place 2-3 oysters and a small piece of butter on each square.
  4. 4 Gather the four corners of the pastry together and secure with a toothpick, leaving the center open.
  5. 5 Bake in a moderate oven (350°F) until golden brown. Remove toothpicks and serve.
