Baked Oyster Pie With Puff Pastry

Ingredients

  • Oysters with their liquor
  • Butter
  • Mace
  • Nutmeg
  • Pepper
  • Salt
  • Milk
  • Flour
  • 2 egg yolks, well beaten
  • Puff pastry (for bottom and top crust)

Method

  1. 1 Strain oyster liquor and boil with butter, mace, nutmeg, pepper, and salt.
  2. 2 Stir in a thickening of milk and flour. Add oysters and simmer until stewed.
  3. 3 Remove from heat and stir in beaten egg yolks. Do not boil after adding eggs.
  4. 4 Line a pie dish with puff pastry. Fill with paper or napkin to support the top crust.
  5. 5 Cover with a lid of pastry and bake until golden.
  6. 6 Carefully remove the top crust and paper, then pour in the hot oyster filling.
