Baked Oyster Pie With Puff Pastry
Ingredients
- Oysters with their liquor
- Butter
- Mace
- Nutmeg
- Pepper
- Salt
- Milk
- Flour
- 2 egg yolks, well beaten
- Puff pastry (for bottom and top crust)
Method
- 1 Strain oyster liquor and boil with butter, mace, nutmeg, pepper, and salt.
- 2 Stir in a thickening of milk and flour. Add oysters and simmer until stewed.
- 3 Remove from heat and stir in beaten egg yolks. Do not boil after adding eggs.
- 4 Line a pie dish with puff pastry. Fill with paper or napkin to support the top crust.
- 5 Cover with a lid of pastry and bake until golden.
- 6 Carefully remove the top crust and paper, then pour in the hot oyster filling.
