Baked Oyster Pie With Lemon Herb Sauce
Ingredients
- 1 pottle oysters (approx. 8-10 cups)
- Large mace
- Whole pepper
- Beaten ginger
- Salt
- Butter
- Marrow
- White wine
- Oyster liquor
- 1 onion
- Garlic
- 1 pound butter
- Minced lemon
- Sweet herbs
Method
- 1 Parboil oysters in their own liquor. Remove, beard, and dry them.
- 2 Season oysters with mace, whole pepper, ginger, salt, butter, and marrow. Place in pie dish.
- 3 Bake the pie until cooked through.
- 4 Make a sauce by boiling white wine, oyster liquor, and onion (or garlic). Add butter, minced lemon, and sweet herbs. Simmer.
- 5 Pour the hot sauce over the baked pie and serve.
