Baked Oxtails With Dried Peas

Ingredients

  • 1 ½ cups dried peas
  • ½ cup chopped onions
  • 2 green peppers, chopped fine
  • 2 oxtails, cut into 2-inch pieces
  • 1 cup tomatoes
  • 2 teaspoons salt
  • ½ teaspoon pepper
  • water, as needed

Method

  1. 1 Soak dried peas overnight, then parboil in the morning.
  2. 2 Have the butcher cut oxtails into 2-inch pieces; soak in lukewarm water for 2 hours, wash, and parboil for 15 minutes.
  3. 3 Combine peas, oxtails, onions, peppers, tomatoes, salt, and pepper in a baking dish.
  4. 4 Add enough water to cover the ingredients.
  5. 5 Bake in a moderate oven (350°F) for 3 hours.
