Baked Oxtails With Dried Peas
Ingredients
- 1 ½ cups dried peas
- ½ cup chopped onions
- 2 green peppers, chopped fine
- 2 oxtails, cut into 2-inch pieces
- 1 cup tomatoes
- 2 teaspoons salt
- ½ teaspoon pepper
- water, as needed
Method
- 1 Soak dried peas overnight, then parboil in the morning.
- 2 Have the butcher cut oxtails into 2-inch pieces; soak in lukewarm water for 2 hours, wash, and parboil for 15 minutes.
- 3 Combine peas, oxtails, onions, peppers, tomatoes, salt, and pepper in a baking dish.
- 4 Add enough water to cover the ingredients.
- 5 Bake in a moderate oven (350°F) for 3 hours.
