Baked Orange Honey Acorn Squash
Ingredients
- 1 small acorn squash
- 1/4 cup orange juice
- 2 tablespoons honey
- 2 tablespoons butter or margarine
- 1/8 teaspoon nutmeg (optional)
Method
- 1 Preheat oven to 400°F. Cut squash in half and remove seeds.
- 2 Place squash halves cut-side up in a shallow baking pan.
- 3 Combine orange juice and honey; pour some mixture into each squash cavity.
- 4 Add 1 tablespoon butter or margarine to each half and sprinkle with nutmeg.
- 5 Cover pan with foil and bake for 30 minutes.
- 6 Remove foil and bake 30 minutes more until tender.
