Baked Orange Honey Acorn Squash

Ingredients

  • 1 small acorn squash
  • 1/4 cup orange juice
  • 2 tablespoons honey
  • 2 tablespoons butter or margarine
  • 1/8 teaspoon nutmeg (optional)

Method

  1. 1 Preheat oven to 400°F. Cut squash in half and remove seeds.
  2. 2 Place squash halves cut-side up in a shallow baking pan.
  3. 3 Combine orange juice and honey; pour some mixture into each squash cavity.
  4. 4 Add 1 tablespoon butter or margarine to each half and sprinkle with nutmeg.
  5. 5 Cover pan with foil and bake for 30 minutes.
  6. 6 Remove foil and bake 30 minutes more until tender.
