Baked Orange Custard With Wine Sauce

Ingredients

  • 4 oranges (zest only)
  • 1 lemon (zest only)
  • 1 pint heavy cream
  • 1/2 tsp ground cinnamon
  • Sugar to taste
  • 1 cup white bread crumbs
  • 1/2 cup milk
  • 6 egg yolks
  • 3 egg whites
  • Butter for greasing dish
  • Wine sauce for serving

Method

  1. 1 Grate the zest from the oranges and lemon. Boil them in the cream with cinnamon and sugar, then strain.
  2. 2 Scald the bread crumbs in milk, then mix with the warm cream. Stir in egg yolks.
  3. 3 Whip egg whites to soft peaks and fold gently into the mixture.
  4. 4 Pour into a buttered dish and bake at 350°F until set and golden brown.
  5. 5 Serve warm with wine sauce.
