Baked Orange Custard With Wine Sauce
Ingredients
- 4 oranges (zest only)
- 1 lemon (zest only)
- 1 pint heavy cream
- 1/2 tsp ground cinnamon
- Sugar to taste
- 1 cup white bread crumbs
- 1/2 cup milk
- 6 egg yolks
- 3 egg whites
- Butter for greasing dish
- Wine sauce for serving
Method
- 1 Grate the zest from the oranges and lemon. Boil them in the cream with cinnamon and sugar, then strain.
- 2 Scald the bread crumbs in milk, then mix with the warm cream. Stir in egg yolks.
- 3 Whip egg whites to soft peaks and fold gently into the mixture.
- 4 Pour into a buttered dish and bake at 350°F until set and golden brown.
- 5 Serve warm with wine sauce.
