Baked Orange Custard With Meringue

Ingredients

  • 6 oranges
  • 1 quart milk
  • 2 tbsp cornstarch
  • 1 pinch salt
  • 1 tsp butter
  • 3 egg yolks
  • ½ cup sugar
  • grated orange peel
  • 3 egg whites
  • 2 tbsp sugar
  • sugar for sprinkling
  • cream for serving

Method

  1. 1 Peel, seed, and quarter six oranges. Place them in a baking dish and sprinkle with sugar.
  2. 2 Thicken 1 quart of milk with 2 tbsp cornstarch (rubbed smooth with a little milk). Add a pinch of salt, 1 tsp butter, and 3 beaten egg yolks mixed with ½ cup sugar. Stir in grated orange peel and cook until smooth and thick, stirring constantly.
  3. 3 Pour the custard over the oranges in the baking dish.
  4. 4 Bake for 20 minutes. Remove and top with meringue made from 3 beaten egg whites and 2 tbsp sugar.
  5. 5 Sprinkle with sugar and bake until the meringue is puffed and brown. Serve cold with cream.
