Baked Orange Custard With Meringue
Ingredients
- 6 oranges
- 1 quart milk
- 2 tbsp cornstarch
- 1 pinch salt
- 1 tsp butter
- 3 egg yolks
- ½ cup sugar
- grated orange peel
- 3 egg whites
- 2 tbsp sugar
- sugar for sprinkling
- cream for serving
Method
- 1 Peel, seed, and quarter six oranges. Place them in a baking dish and sprinkle with sugar.
- 2 Thicken 1 quart of milk with 2 tbsp cornstarch (rubbed smooth with a little milk). Add a pinch of salt, 1 tsp butter, and 3 beaten egg yolks mixed with ½ cup sugar. Stir in grated orange peel and cook until smooth and thick, stirring constantly.
- 3 Pour the custard over the oranges in the baking dish.
- 4 Bake for 20 minutes. Remove and top with meringue made from 3 beaten egg whites and 2 tbsp sugar.
- 5 Sprinkle with sugar and bake until the meringue is puffed and brown. Serve cold with cream.
