Baked Orange Bread Pudding

Ingredients

  • 3 oranges, peeled and diced
  • 1 ½ cups fine bread crumbs
  • 1 cup boiling water
  • 1 well-beaten egg
  • ¾ cup milk
  • 3 tablespoons shortening
  • ½ cup syrup
  • ½ cup sugar
  • 3 teaspoons baking powder
  • 6 tablespoons flour

Method

  1. 1 Dice the oranges and place in a bowl with bread crumbs and boiling water.
  2. 2 Mix, let cool, then add egg, milk, shortening, syrup, sugar, baking powder, and flour.
  3. 3 Mix thoroughly and pour into greased custard cups or a pudding mold.
  4. 4 Place in a pan of hot water and bake in a moderate oven (350°F) for 40 minutes.
