Baked Onion Mashed Potato Cakes
Ingredients
- 1 pint mashed potatoes
- 1 large English onion
- 1 oz butter
- Salt and pepper to taste
- Flour for coating
Method
- 1 Mince the onion finely and fry it in butter until golden brown.
- 2 Mix the fried onion into the mashed potatoes with salt and pepper.
- 3 Form the mixture into cakes, coat them well in flour, and place in a greased baking tin.
- 4 Dot with small bits of butter and bake until nicely browned.
