Baked Onion Custards

Ingredients

  • 1/2 cup chopped onions
  • 1 1/2 cups milk
  • 2 eggs
  • 1 tsp salt
  • 1 tsp paprika
  • 2 tbsp finely chopped parsley
  • 1/2 cup fine breadcrumbs
  • 1 quart water (for water bath)

Method

  1. 1 Parboil the chopped onions, then drain and set aside.
  2. 2 In a bowl, beat together the milk, eggs, salt, paprika, and parsley until well mixed.
  3. 3 Grease six custard cups. Mix the drained onions with the breadcrumbs and divide the mixture evenly among the cups.
  4. 4 Pour the custard mixture over the onion-breadcrumb base in each cup.
  5. 5 Place the cups in a baking pan and add enough hot water to reach halfway up the sides of the cups.
  6. 6 Bake in a moderate oven (350°F) for 25 minutes or until the center is firm. Serve in the cups or unmold onto toast.
