Baked Onion Custards
Ingredients
- 1/2 cup chopped onions
- 1 1/2 cups milk
- 2 eggs
- 1 tsp salt
- 1 tsp paprika
- 2 tbsp finely chopped parsley
- 1/2 cup fine breadcrumbs
- 1 quart water (for water bath)
Method
- 1 Parboil the chopped onions, then drain and set aside.
- 2 In a bowl, beat together the milk, eggs, salt, paprika, and parsley until well mixed.
- 3 Grease six custard cups. Mix the drained onions with the breadcrumbs and divide the mixture evenly among the cups.
- 4 Pour the custard mixture over the onion-breadcrumb base in each cup.
- 5 Place the cups in a baking pan and add enough hot water to reach halfway up the sides of the cups.
- 6 Bake in a moderate oven (350°F) for 25 minutes or until the center is firm. Serve in the cups or unmold onto toast.
