Baked Oat Cakes
Ingredients
- 1 cup sugar
- 1 teaspoon butter
- 2 teaspoons baking powder
- 1 teaspoon vanilla
- 2 eggs
- 2½ cups rolled oats
Method
- 1 Cream the butter, then add the sugar and eggs, mixing thoroughly.
- 2 Stir in the vanilla and baking powder, then mix in the oats until a stiff batter forms.
- 3 Mold the mixture into small cakes using a teaspoon and place them two inches apart in buttered pans.
- 4 Bake for ten minutes.
