Baked Mullet With Anchovy And Almonds
Ingredients
- 1 whole mullet (or sole)
- 2 oz butter
- Salt to taste
- 1 small onion, chopped
- 1 sprig parsley, chopped
- A few blanched almonds, chopped
- 1 anchovy
- A few button mushrooms, softened in hot water
- 2 tbsp tomato sauce or puree
Method
- 1 Clean the mullet by removing fins and gills. Place it in a fireproof dish with butter and salt.
- 2 Chop the onion, parsley, almonds, anchovy, and mushrooms. Arrange these ingredients over the fish.
- 3 Bake for 20 minutes. Remove from oven and top with tomato sauce or puree before serving.
