Baked Mullet With Anchovy And Almonds

Ingredients

  • 1 whole mullet (or sole)
  • 2 oz butter
  • Salt to taste
  • 1 small onion, chopped
  • 1 sprig parsley, chopped
  • A few blanched almonds, chopped
  • 1 anchovy
  • A few button mushrooms, softened in hot water
  • 2 tbsp tomato sauce or puree

Method

  1. 1 Clean the mullet by removing fins and gills. Place it in a fireproof dish with butter and salt.
  2. 2 Chop the onion, parsley, almonds, anchovy, and mushrooms. Arrange these ingredients over the fish.
  3. 3 Bake for 20 minutes. Remove from oven and top with tomato sauce or puree before serving.
