Baked Mozzarella Chicken With Garlic Spinach
Ingredients
- 4 small chicken breast halves, skinless and boneless
- 8 ounces Italian seasoned bread crumbs, crushed
- 1 cup part-skim shredded mozzarella cheese
- 4 tablespoons canola oil
- 2 cloves garlic, minced
- 2 packages spinach leaves
Method
- 1 Preheat oven to 400°F. Pound chicken breasts to 1/4-inch thickness between plastic wrap.
- 2 Coat chicken with bread crumbs and place on a foil-lined baking sheet. Bake for 10 minutes.
- 3 Top chicken with mozzarella cheese and bake for 4-5 minutes until cheese melts and chicken reaches 165°F.
- 4 While chicken bakes, heat oil in a large skillet over medium heat. Add garlic and stir for 1 minute.
- 5 Add half the spinach and cook for 1 minute. Add remaining spinach and cook until wilted, turning occasionally.
- 6 Serve the chicken with the sautéed garlic spinach.
