Baked Mozzarella Chicken With Garlic Spinach

Ingredients

  • 4 small chicken breast halves, skinless and boneless
  • 8 ounces Italian seasoned bread crumbs, crushed
  • 1 cup part-skim shredded mozzarella cheese
  • 4 tablespoons canola oil
  • 2 cloves garlic, minced
  • 2 packages spinach leaves

Method

  1. 1 Preheat oven to 400°F. Pound chicken breasts to 1/4-inch thickness between plastic wrap.
  2. 2 Coat chicken with bread crumbs and place on a foil-lined baking sheet. Bake for 10 minutes.
  3. 3 Top chicken with mozzarella cheese and bake for 4-5 minutes until cheese melts and chicken reaches 165°F.
  4. 4 While chicken bakes, heat oil in a large skillet over medium heat. Add garlic and stir for 1 minute.
  5. 5 Add half the spinach and cook for 1 minute. Add remaining spinach and cook until wilted, turning occasionally.
  6. 6 Serve the chicken with the sautéed garlic spinach.
