Baked Meringue Topped Rusks
Ingredients
- 6 circular rusks
- Butter, for spreading
- Jam, for layering
- 3 egg whites
Method
- 1 Butter six circular rusks and spread a layer of jam on each.
- 2 Beat the whites of three eggs until stiff peaks form.
- 3 Pipe or spoon the egg whites onto the rusks in a pyramid shape.
- 4 Bake in a moderate oven (350°F) until lightly golden.
- 5 Serve immediately while hot.
