Baked Meat And Rice Puddings

Ingredients

  • 3/4 cup chopped cold meat
  • 1 cup cold boiled rice
  • 1 small onion, grated
  • 1 green pepper, chopped fine
  • 2 tsp salt
  • 1 tsp paprika
  • 2 tsp garlic vinegar
  • 1/2 tsp thyme
  • 1 egg
  • 5 tbsp cold stock, water, or gravy

Method

  1. 1 Combine chopped meat, rice, onion, pepper, salt, paprika, garlic vinegar, thyme, egg, and stock in a bowl. Mix thoroughly.
  2. 2 Grease and flour custard cups. Fill each cup slightly more than halfway with the mixture and smooth the top.
  3. 3 Place cups in a pan with water. Bake in a moderate oven (350°F) for 40 minutes.
  4. 4 Unmold the puddings and serve with cream or brown sauce.
