Baked Mashed Potato Rolls With Onion

Ingredients

  • 2 lbs cold mashed potatoes
  • 1 boiled Spanish onion, chopped fine
  • 1 oz butter, melted
  • 1 egg yolk
  • 1 tsp powdered thyme
  • Nutmeg, pepper, and salt to taste
  • Allinson nut-oil or hot butter for brushing

Method

  1. 1 Chop the boiled onion fine and mix it into the cold mashed potatoes.
  2. 2 Add the melted butter, egg yolk, thyme, nutmeg, pepper, and salt to the potato mixture. Mix everything well until combined.
  3. 3 Shape the mixture into small rolls, approximately 3 inches long.
  4. 4 Brush the rolls with nut-oil or hot butter and place on a floured baking sheet.
  5. 5 Bake in a moderate oven (350°F) for 10 to 20 minutes until browned. Serve with brown sauce and vegetables.
