Baked Mashed Potato Puffs
Ingredients
- 1 pint mashed potatoes
- 2 oz butter
- 3 eggs
- 1/2 pint milk
- 1/8 tsp nutmeg
- pepper and salt to taste
- 2 tsp finely chopped parsley
Method
- 1 Beat butter with a fork until creamy. Mix mashed potatoes with the butter.
- 2 Whip egg yolks with milk. Stir in nutmeg, parsley, and seasoning.
- 3 Fold beaten egg whites into the potato mixture until combined.
- 4 Pour into a buttered pie dish and bake in a hot oven (425°F) for 1 hour.
