Baked Mashed Potato Puffs

Ingredients

  • 1 pint mashed potatoes
  • 2 oz butter
  • 3 eggs
  • 1/2 pint milk
  • 1/8 tsp nutmeg
  • pepper and salt to taste
  • 2 tsp finely chopped parsley

Method

  1. 1 Beat butter with a fork until creamy. Mix mashed potatoes with the butter.
  2. 2 Whip egg yolks with milk. Stir in nutmeg, parsley, and seasoning.
  3. 3 Fold beaten egg whites into the potato mixture until combined.
  4. 4 Pour into a buttered pie dish and bake in a hot oven (425°F) for 1 hour.
