Baked Mashed Potato Puff
Ingredients
- 2 cups mashed boiled or baked potatoes
- 2 tablespoons melted butter
- 2 well-beaten egg whites
- 1 cup sweet cream or rich milk
- Salt and pepper to taste
Method
- 1 Stir the melted butter into the mashed potatoes until well combined.
- 2 Add the well-beaten egg whites and cream (or milk) to the potato mixture.
- 3 Season with salt and pepper, then stir to combine.
- 4 Turn the mixture into a buttered baking dish.
- 5 Bake in a quick oven (400°F) until set and lightly browned.
- 6 Serve directly in the baking dish.
