Baked Mashed Potato Casserole
Ingredients
- 2 cups cold mashed potato
- 6 teaspoons melted butter
- 2 eggs, whipped light
- 3/4 cup cream or milk
- Salt to taste
Method
- 1 Beat the cold mashed potato and melted butter together until they form a white cream.
- 2 Add the whipped eggs and cream (or milk) to the potato mixture, seasoning with salt to taste.
- 3 Beat all ingredients well together, then pour the mixture into a deep baking dish.
- 4 Bake in a 425°F oven until the top is nicely browned and the puff is light and airy.
