Baked Mashed Potato Cakes
Ingredients
- 3 large potatoes
- 2 cups mashed potatoes
- 2 cups flour
- 1 tsp salt
- 4 tsp baking powder
- 1 egg
- 4 tbsp milk
Method
- 1 Cook, peel, and mash the potatoes until fine.
- 2 In a mixing bowl, combine 2 cups mashed potatoes, flour, salt, baking powder, egg, and milk. Mix to a smooth dough.
- 3 Roll out the dough to one-half inch thick.
- 4 Cut into shapes and brush the tops with milk.
- 5 Bake in a hot oven (425°F) for 18 minutes.
