Baked Mashed Potato Cakes

Ingredients

  • 3 large potatoes
  • 2 cups mashed potatoes
  • 2 cups flour
  • 1 tsp salt
  • 4 tsp baking powder
  • 1 egg
  • 4 tbsp milk

Method

  1. 1 Cook, peel, and mash the potatoes until fine.
  2. 2 In a mixing bowl, combine 2 cups mashed potatoes, flour, salt, baking powder, egg, and milk. Mix to a smooth dough.
  3. 3 Roll out the dough to one-half inch thick.
  4. 4 Cut into shapes and brush the tops with milk.
  5. 5 Bake in a hot oven (425°F) for 18 minutes.
