Baked Mashed Potato And Carrot Casserole
Ingredients
- 1 1/2 lbs boiled potatoes
- 3/4 lb boiled carrots
- 2 eggs
- 1 oz butter
- Salt and pepper to taste
- Fresh parsley for garnish
Method
- 1 Mash the boiled potatoes and carrots together in a large bowl until smooth.
- 2 Beat the eggs well, then mix them into the vegetable mash along with salt and pepper.
- 3 Butter a baking mold, fill it with the mixture, and dot the top with remaining butter.
- 4 Bake in a moderate oven (350°F) for 30 minutes until heated through and golden.
- 5 Turn out onto a serving plate and garnish with chopped fresh parsley.
