Baked Mashed Potato And Carrot Casserole

  • 1 1/2 lbs boiled potatoes
  • 3/4 lb boiled carrots
  • 2 eggs
  • 1 oz butter
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method

  1. 1 Mash the boiled potatoes and carrots together in a large bowl until smooth.
  2. 2 Beat the eggs well, then mix them into the vegetable mash along with salt and pepper.
  3. 3 Butter a baking mold, fill it with the mixture, and dot the top with remaining butter.
  4. 4 Bake in a moderate oven (350°F) for 30 minutes until heated through and golden.
  5. 5 Turn out onto a serving plate and garnish with chopped fresh parsley.
