Baked Lobster Stuffed In Shells
Ingredients
- 2 cups boiled lobster meat
- 1 cup milk or cream
- 3 tbsp butter, divided
- 1 tbsp flour
- 3 egg yolks, hard-boiled and mashed
- 2 tbsp bread crumbs
- 1 tbsp salt
- 1 tbsp chopped parsley
- ¼ nutmeg, grated
- Dash of cayenne pepper or paprika
Method
- 1 Melt 1 tbsp butter in a saucepan. Whisk in flour and cook without browning. Slowly stir in milk until smooth, then remove from heat.
- 2 Stir in salt, pepper, parsley, mashed egg yolks, and nutmeg. Fold in lobster meat cut into ½-inch pieces, being careful not to break the meat.
- 3 Prepare clean lobster shells. Mix bread crumbs with 1 tbsp melted butter and spread over the lobster mixture in the shells.
- 4 Bake in a moderate oven (350°F) for a few minutes until the top is browned. Serve immediately.
