Baked Lobster Stuffed In Shells

Ingredients

  • 2 cups boiled lobster meat
  • 1 cup milk or cream
  • 3 tbsp butter, divided
  • 1 tbsp flour
  • 3 egg yolks, hard-boiled and mashed
  • 2 tbsp bread crumbs
  • 1 tbsp salt
  • 1 tbsp chopped parsley
  • ¼ nutmeg, grated
  • Dash of cayenne pepper or paprika

Method

  1. 1 Melt 1 tbsp butter in a saucepan. Whisk in flour and cook without browning. Slowly stir in milk until smooth, then remove from heat.
  2. 2 Stir in salt, pepper, parsley, mashed egg yolks, and nutmeg. Fold in lobster meat cut into ½-inch pieces, being careful not to break the meat.
  3. 3 Prepare clean lobster shells. Mix bread crumbs with 1 tbsp melted butter and spread over the lobster mixture in the shells.
  4. 4 Bake in a moderate oven (350°F) for a few minutes until the top is browned. Serve immediately.
