Baked Lima Beans With Tomatoes And Peppers
Ingredients
- 1/2 pound baby lima beans
- 1 cup stewed tomatoes
- 1 onion, minced
- 1 green pepper, minced
- 1 teaspoon salt
- 1 tablespoon paprika
- 1/2 cup salad oil
- 4 tablespoons syrup
- water
Method
- 1 Wash beans, discard damaged ones, and soak overnight in cold water.
- 2 Rinse beans, cover with cold water, bring to a boil, drain, and rinse again.
- 3 Cover beans with boiling water in a saucepan and cook for 20 minutes.
- 4 Transfer beans to a baking dish and add tomatoes, onion, pepper, salt, paprika, oil, and syrup.
- 5 Add enough water to cover beans by one inch, mix well, and bake in a slow oven (300°F) for 2 hours.
