Baked Lima Beans With Tomatoes And Peppers

Ingredients

  • 1/2 pound baby lima beans
  • 1 cup stewed tomatoes
  • 1 onion, minced
  • 1 green pepper, minced
  • 1 teaspoon salt
  • 1 tablespoon paprika
  • 1/2 cup salad oil
  • 4 tablespoons syrup
  • water

Method

  1. 1 Wash beans, discard damaged ones, and soak overnight in cold water.
  2. 2 Rinse beans, cover with cold water, bring to a boil, drain, and rinse again.
  3. 3 Cover beans with boiling water in a saucepan and cook for 20 minutes.
  4. 4 Transfer beans to a baking dish and add tomatoes, onion, pepper, salt, paprika, oil, and syrup.
  5. 5 Add enough water to cover beans by one inch, mix well, and bake in a slow oven (300°F) for 2 hours.
