Baked Lima Beans With Bacon And Tomatoes
Ingredients
- 2 cups dried lima beans
- 4 slices bacon or salt pork
- 1 medium onion, minced
- 1 green pepper, minced
- 1 cup canned tomatoes
- 2 tsp salt
- 1 tsp mustard
- 2 tbsp brown sugar
Method
- 1 Soak beans overnight in cold water, then drain.
- 2 Boil beans in 2 quarts fresh water until tender.
- 3 Place beans in a buttered casserole dish.
- 4 Mix in minced onion, green pepper, tomatoes, salt, mustard, and brown sugar.
- 5 Top with bacon or salt pork slices.
- 6 Cover and bake at 325°F for 2 hours, adding water if necessary.
- 7 Uncover and bake for 20 minutes more.
