Baked Lima Beans With Bacon And Tomatoes

Ingredients

  • 2 cups dried lima beans
  • 4 slices bacon or salt pork
  • 1 medium onion, minced
  • 1 green pepper, minced
  • 1 cup canned tomatoes
  • 2 tsp salt
  • 1 tsp mustard
  • 2 tbsp brown sugar

Method

  1. 1 Soak beans overnight in cold water, then drain.
  2. 2 Boil beans in 2 quarts fresh water until tender.
  3. 3 Place beans in a buttered casserole dish.
  4. 4 Mix in minced onion, green pepper, tomatoes, salt, mustard, and brown sugar.
  5. 5 Top with bacon or salt pork slices.
  6. 6 Cover and bake at 325°F for 2 hours, adding water if necessary.
  7. 7 Uncover and bake for 20 minutes more.
