Baked Lentil Tomato Casserole With Cheddar
Ingredients
- 3/4 cup lentils, rinsed
- 1/2 cup water
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper, optional
- 1/2 cup onion, chopped
- 1/4 teaspoon garlic powder, optional
- 1 can tomatoes
- 2 carrots, thinly sliced
- 1/2 cup cheddar cheese, shredded
Method
- 1 Combine lentils, water, salt, pepper, onion, garlic powder, and tomatoes in a bowl.
- 2 Transfer mixture to a 2-quart casserole dish and cover tightly with lid or foil.
- 3 Bake at 350°F for 30 minutes.
- 4 Remove from oven, stir in sliced carrots, and cover again.
- 5 Bake for 30 minutes longer.
- 6 Uncover, sprinkle cheese on top, and bake 5 minutes until cheese melts.
