Baked Lentil Tomato Casserole With Cheddar

Ingredients

  • 3/4 cup lentils, rinsed
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper, optional
  • 1/2 cup onion, chopped
  • 1/4 teaspoon garlic powder, optional
  • 1 can tomatoes
  • 2 carrots, thinly sliced
  • 1/2 cup cheddar cheese, shredded

Method

  1. 1 Combine lentils, water, salt, pepper, onion, garlic powder, and tomatoes in a bowl.
  2. 2 Transfer mixture to a 2-quart casserole dish and cover tightly with lid or foil.
  3. 3 Bake at 350°F for 30 minutes.
  4. 4 Remove from oven, stir in sliced carrots, and cover again.
  5. 5 Bake for 30 minutes longer.
  6. 6 Uncover, sprinkle cheese on top, and bake 5 minutes until cheese melts.
