Baked Lentil Rice And Tomato Casserole

Ingredients

  • 1 cup lentils
  • 1 cup rice
  • 1 quart tomatoes
  • 1 teaspoon Worcestershire sauce
  • 2 teaspoons salt
  • 1/2 teaspoon cayenne
  • 1/2 teaspoon bay leaf
  • 1/2 teaspoon sage

Method

  1. 1 Soak lentils overnight, then drain.
  2. 2 Add lentils to one quart fresh water and one teaspoon salt. Cook slowly until tender.
  3. 3 Add rice, tomatoes, Worcestershire, remaining salt, cayenne, bay leaf, and sage.
  4. 4 Steam or bake for 45 minutes.
