Baked Lentil Rice And Tomato Casserole
Ingredients
- 1 cup lentils
- 1 cup rice
- 1 quart tomatoes
- 1 teaspoon Worcestershire sauce
- 2 teaspoons salt
- 1/2 teaspoon cayenne
- 1/2 teaspoon bay leaf
- 1/2 teaspoon sage
Method
- 1 Soak lentils overnight, then drain.
- 2 Add lentils to one quart fresh water and one teaspoon salt. Cook slowly until tender.
- 3 Add rice, tomatoes, Worcestershire, remaining salt, cayenne, bay leaf, and sage.
- 4 Steam or bake for 45 minutes.
