Baked Lentil Cheese Roast With White Sauce
Ingredients
- 1 cup cooked lentils
- 1 cup chopped peanuts
- 1 cup grated cheese
- 1 cup bread crumbs
- 1 tablespoon fat
- 2 tablespoons lemon juice
- ½ teaspoon salt
- 1/8 teaspoon cayenne
- 1 teaspoon onion juice
- 2 tablespoons fat
- 2 tablespoons flour
- ½ teaspoon salt
- 1/8 teaspoon cayenne
- 1 cup milk
- 3 tablespoons chopped olives
Method
- 1 Mix lentils, peanuts, cheese, bread crumbs, 1 tablespoon fat, lemon juice, ½ teaspoon salt, 1/8 teaspoon cayenne, and onion juice.
- 2 Place mixture in a greased dish and bake at 350°F for 30 minutes.
- 3 Melt 2 tablespoons fat, whisk in flour, ½ teaspoon salt, and 1/8 teaspoon cayenne. Gradually add milk and cook until boiling.
- 4 Stir in olives, pour sauce over roast, and bake for 20 minutes. Serve immediately.
