Baked Lentil And Potato Puff

Ingredients

  • 1 1/4 cups lentil purée
  • 1 1/2 cups riced potatoes
  • 2 tablespoons butter
  • 1/2 cup milk
  • 1 1/2 teaspoons salt
  • 1/8 teaspoon pepper
  • 2 eggs

Method

  1. 1 Soak black lentils overnight with a pinch of soda, parboil for 10 minutes, then cook in fresh water until tender and dry.
  2. 2 Force cooked lentils through a colander to make a dry purée; similarly rice cooked potatoes.
  3. 3 Combine lentil purée, riced potatoes, butter, milk, salt, and pepper in a bowl.
  4. 4 Beat egg yolks and stir into the mixture; beat egg whites until stiff and fold in gently.
  5. 5 Pour into a buttered baking dish and bake in a moderate oven (350°F) until set and browned.
