Baked Lentil And Potato Puff
Ingredients
- 1 1/4 cups lentil purée
- 1 1/2 cups riced potatoes
- 2 tablespoons butter
- 1/2 cup milk
- 1 1/2 teaspoons salt
- 1/8 teaspoon pepper
- 2 eggs
Method
- 1 Soak black lentils overnight with a pinch of soda, parboil for 10 minutes, then cook in fresh water until tender and dry.
- 2 Force cooked lentils through a colander to make a dry purée; similarly rice cooked potatoes.
- 3 Combine lentil purée, riced potatoes, butter, milk, salt, and pepper in a bowl.
- 4 Beat egg yolks and stir into the mixture; beat egg whites until stiff and fold in gently.
- 5 Pour into a buttered baking dish and bake in a moderate oven (350°F) until set and browned.
