Baked Lemon Rice Pudding With Meringue
Ingredients
- 1 cup rice
- 2 cups milk
- 3 egg yolks
- 3 tbsp sugar
- grated rind of 2 lemons
- salt
- cold milk (as needed)
- 3 egg whites
- 8 tbsp sugar
- juice of 2 lemons
Method
- 1 Boil rice in milk until very soft.
- 2 Stir in egg yolks, 3 tbsp sugar, lemon rind, and salt while hot. Add cold milk if too thick; consistency should be slightly thicker than boiled custard.
- 3 Turn mixture into a pudding dish.
- 4 Beat egg whites stiff with 8 tbsp sugar and lemon juice.
- 5 Spread topping over pudding and brown delicately in the oven.
- 6 Chill on ice and serve cold.
