Baked Lemon Rice Pudding Pie
Ingredients
- 1/2 lb rice
- milk
- 3/4 lb sugar
- 3/4 lb melted butter
- 1/2 nutmeg
- 6 eggs
- 1/4 cup wine
- grated lemon peel
- pie crust
Method
- 1 Boil rice in milk until tender.
- 2 Beat rice well with a wooden spoon to mash grains.
- 3 Mix in sugar, melted butter, nutmeg, eggs, wine, and lemon peel.
- 4 Place mixture in a pie crust-lined dish and bake.
