Baked Lemon Potato Pudding
Ingredients
- 1 lb potatoes, well mashed
- 1 oz butter
- 3 eggs
- 1.5 oz sugar
- Rind and juice of 1/2 lemon
- 1/4 cup milk
Method
- 1 Beat the butter until creamy, then mix it thoroughly with the mashed potatoes.
- 2 Add the well-beaten eggs, sugar, lemon rind, lemon juice, and milk to the potato mixture. Stir until combined.
- 3 Pour the mixture into a buttered pie dish and bake for 30 minutes.
