Baked Lemon Potato Pudding

  • 1 oz butter
  • 3 eggs
  • 1.5 oz sugar
  • Rind and juice of 1/2 lemon
  • 1/4 cup milk

Method

  1. 1 Beat the butter until creamy, then mix it thoroughly with the mashed potatoes.
  2. 2 Add the well-beaten eggs, sugar, lemon rind, lemon juice, and milk to the potato mixture. Stir until combined.
  3. 3 Pour the mixture into a buttered pie dish and bake for 30 minutes.
