Baked Lemon Meringue Rice Pudding
Ingredients
- 1 cup rice
- Milk to cover
- Pinch of salt
- Pinch of sugar
- Flavoring to taste
- 3 egg yolks
- 3 egg whites
- 2 tbsp sugar
- Grated lemon peel
Method
- 1 Boil rice in milk until tender, adding salt, sugar, and flavoring.
- 2 Remove from heat and stir in well-beaten egg yolks.
- 3 Pour mixture into a buttered baking dish.
- 4 Top with meringue made from stiffly beaten egg whites, sugar, and lemon peel.
- 5 Brown in a moderate oven (350°F) and serve cold.
