Baked Lemon Meringue Rice Pudding

Ingredients

  • 1 cup rice
  • Milk to cover
  • Pinch of salt
  • Pinch of sugar
  • Flavoring to taste
  • 3 egg yolks
  • 3 egg whites
  • 2 tbsp sugar
  • Grated lemon peel

Method

  1. 1 Boil rice in milk until tender, adding salt, sugar, and flavoring.
  2. 2 Remove from heat and stir in well-beaten egg yolks.
  3. 3 Pour mixture into a buttered baking dish.
  4. 4 Top with meringue made from stiffly beaten egg whites, sugar, and lemon peel.
  5. 5 Brown in a moderate oven (350°F) and serve cold.
