Baked Lemon Meringue Kisses

Ingredients

  • 3 egg whites
  • 1/4 teaspoon salt
  • 3/4 cup powdered sugar
  • Lemon juice or flavoring essence

Method

  1. 1 Add 1/4 teaspoon salt to 3 egg whites and beat until foamy.
  2. 2 Gradually add 3/4 cup powdered sugar while whipping until mixture is smooth and firm enough to hold its shape.
  3. 3 Add a few drops of lemon juice or flavoring essence.
  4. 4 Pipe meringue into small kisses or large oblong shapes onto parchment paper.
  5. 5 Flatten the top point with a wet knife and sprinkle lightly with sugar.
  6. 6 Bake in a very slow oven (300°F) for at least 1 hour until dry and slightly colored.
  7. 7 Remove from paper; for large meringues, scoop out soft centers or press bottoms to dry inside.
