Baked Lemon Meringue Kisses
Ingredients
- 3 egg whites
- 1/4 teaspoon salt
- 3/4 cup powdered sugar
- Lemon juice or flavoring essence
Method
- 1 Add 1/4 teaspoon salt to 3 egg whites and beat until foamy.
- 2 Gradually add 3/4 cup powdered sugar while whipping until mixture is smooth and firm enough to hold its shape.
- 3 Add a few drops of lemon juice or flavoring essence.
- 4 Pipe meringue into small kisses or large oblong shapes onto parchment paper.
- 5 Flatten the top point with a wet knife and sprinkle lightly with sugar.
- 6 Bake in a very slow oven (300°F) for at least 1 hour until dry and slightly colored.
- 7 Remove from paper; for large meringues, scoop out soft centers or press bottoms to dry inside.
