Baked Lemon Ground Rice Pudding

Ingredients

  • 2 tablespoons ground rice
  • 1 pint milk
  • 2 oz sugar
  • 1 or 2 eggs, beaten
  • grated lemon rind or flavoring essence

Method

  1. 1 Boil the milk with the sugar.
  2. 2 Mix the rice smoothly with a little cold milk.
  3. 3 Pour the rice mixture into the boiling milk and stir until it thickens.
  4. 4 Add the beaten eggs and flavoring.
  5. 5 Pour into a pie dish and bake for about thirty minutes.
