Baked Lemon Ground Rice Pudding
Ingredients
- 2 tablespoons ground rice
- 1 pint milk
- 2 oz sugar
- 1 or 2 eggs, beaten
- grated lemon rind or flavoring essence
Method
- 1 Boil the milk with the sugar.
- 2 Mix the rice smoothly with a little cold milk.
- 3 Pour the rice mixture into the boiling milk and stir until it thickens.
- 4 Add the beaten eggs and flavoring.
- 5 Pour into a pie dish and bake for about thirty minutes.
