Baked Lemon Farina Custard
Ingredients
- 2 cups milk
- 4 tablespoons farina
- 3 tablespoons sugar
- 3 eggs, separated
- Grated rind of ½ lemon
- Dash of salt
Method
- 1 Heat milk and lemon zest in a double boiler until boiling.
- 2 Stir in farina and cook for 5 minutes.
- 3 Remove from heat and stir into beaten egg yolks and sugar until cool.
- 4 Beat egg whites with salt to stiff peaks and fold into mixture.
- 5 Pour into a dish in a water bath and bake at 350°F for 25 minutes.
