Baked Lemon Farina Custard

Ingredients

  • 2 cups milk
  • 4 tablespoons farina
  • 3 tablespoons sugar
  • 3 eggs, separated
  • Grated rind of ½ lemon
  • Dash of salt

Method

  1. 1 Heat milk and lemon zest in a double boiler until boiling.
  2. 2 Stir in farina and cook for 5 minutes.
  3. 3 Remove from heat and stir into beaten egg yolks and sugar until cool.
  4. 4 Beat egg whites with salt to stiff peaks and fold into mixture.
  5. 5 Pour into a dish in a water bath and bake at 350°F for 25 minutes.
