Baked Lemon Date Custard With Meringue

Ingredients

  • 1 pint milk
  • 1 tablespoon cornstarch
  • 2 tablespoons cold milk
  • 3 egg yolks
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon extract
  • 1 tablespoon butter
  • Chopped dates
  • Chopped almonds or English walnuts
  • Meringue (egg whites and sugar, flavored with lemon)

Method

  1. 1 Rub cornstarch with 2 tablespoons cold milk. Thicken 1 pint milk with this mixture over heat.
  2. 2 Remove from heat. Whisk in beaten egg yolks, sugar, and lemon extract. Stir in butter.
  3. 3 Pour into a buttered baking dish. Bake in a moderate oven (350°F) until set and browned.
  4. 4 Top with chopped dates and nuts. Add lemon-flavored meringue. Return to oven until puffed and brown.
  5. 5 Serve cold.
