Baked Lemon Date Custard With Meringue
Ingredients
- 1 pint milk
- 1 tablespoon cornstarch
- 2 tablespoons cold milk
- 3 egg yolks
- 2 tablespoons granulated sugar
- 1 teaspoon lemon extract
- 1 tablespoon butter
- Chopped dates
- Chopped almonds or English walnuts
- Meringue (egg whites and sugar, flavored with lemon)
Method
- 1 Rub cornstarch with 2 tablespoons cold milk. Thicken 1 pint milk with this mixture over heat.
- 2 Remove from heat. Whisk in beaten egg yolks, sugar, and lemon extract. Stir in butter.
- 3 Pour into a buttered baking dish. Bake in a moderate oven (350°F) until set and browned.
- 4 Top with chopped dates and nuts. Add lemon-flavored meringue. Return to oven until puffed and brown.
- 5 Serve cold.
